Who holds the private keys — and therefore the coins — on your behalf.
On an exchange, the exchange has custody: you hold a claim against it. In a self-custody wallet, you hold the keys and the coins directly. The trade-off is between counterparty risk (the exchange fails) and personal risk (you lose the key or sign a malicious transaction).
